No Bake, high protein, treats that are refreshingly cool.
Testing at DCAL on 9/12/25.
- 1 ½ cups cottage cheese, strained
- 1 lemon (2 tbsp juice and 1 tbsp zest)
- *Additional 1 tbsp lemon zest for coating
- 4 tablespoons raw honey (+/-)
- 1 tbsp coconut oil, unrefined tastes more like coconut
- 2 cups unsweetened coconut, reserve 1 cup
Instructions:

- Mix all ingredients except the reserved coconut.
- Chill for at least one hour.
- Mix reserved coconut and lemon zest.
- Scoop chilled dough and form balls.
- Roll balls into coco/lemon zest, coating well.
- Keep chilled until served. Enjoy!
Alternative:
Rather than roll balls in coconut/zest, put on top a cookie base:
- 1/2 cup ground oats
- 1/2 cup ground almonds
- 1 Medjool Date
Blended so it forms a ball then press in pan.
Then cover with melted chocolate. (Mounds)
