Lemon-Coconut Balls

No Bake, high protein, treats that are refreshingly cool.

Testing at DCAL on 9/12/25.

  • 1 ½ cups cottage cheese, strained
  • 1 lemon (2 tbsp juice and 1 tbsp zest)
  • *Additional 1 tbsp lemon zest for coating
  • 4 tablespoons raw honey (+/-)
  • 1 tbsp coconut oil, unrefined tastes more like coconut
  • 2 cups unsweetened coconut, reserve 1 cup

Instructions:

  • Mix all ingredients except the reserved coconut.
  • Chill for at least one hour.
  • Mix reserved coconut and lemon zest.
  • Scoop chilled dough and form balls.
  • Roll balls into coco/lemon zest, coating well.
  • Keep chilled until served. Enjoy!

Alternative:

Rather than roll balls in coconut/zest, put on top a cookie base:

  • 1/2 cup ground oats
  • 1/2 cup ground almonds
  • 1 Medjool Date

Blended so it forms a ball then press in pan.

Then cover with melted chocolate. (Mounds)
