Easy Bean Salad

Ingredients

Blend together:

  • 1/2 small red onion, finely diced
  • 1 medium jalapeno pepper, seeded and finely diced
  • 2 garlic cloves, finely minced
  • 2-3 tbsp lime juice
  • 2-3 tbsp olive oil
  • 1/2 tsp cumin
  • 1/2 tsp sea salt
  • 1/2 cup minced cilantro
  • 1 tsp raw honey or sweetener

Set aside for 20 minutes.

Mix in the following:

  • 13.4 oz canned or 1-1/2 cups cooked black beans, drained and rinsed
  • 1 cup yellow corn
  • 1 medium avocado, cubed
  • 6-10 cherry tomatoes, halved

Serve chilled.
