Ingredients
Blend together:
- 1/2 small red onion, finely diced
- 1 medium jalapeno pepper, seeded and finely diced
- 2 garlic cloves, finely minced
- 2-3 tbsp lime juice
- 2-3 tbsp olive oil
- 1/2 tsp cumin
- 1/2 tsp sea salt
- 1/2 cup minced cilantro
- 1 tsp raw honey or sweetener
Set aside for 20 minutes.
Mix in the following:
- 13.4 oz canned or 1-1/2 cups cooked black beans, drained and rinsed
- 1 cup yellow corn
- 1 medium avocado, cubed
- 6-10 cherry tomatoes, halved
Serve chilled.
