Dirty Popcorn

One cup of plain popped Popcorn without oil or toppings is a whole grain, low calorie, high fiber snack:

  • Calories:  31 calories
  • Protein: 1 gram
  • Carbohydrates: 4 grams
    • including about 0.07 grams of natural sugar
  • Fiber: About 1.2 grams

Ingredients

2 tbsp Popcorn kernels
1-2 tsp tbsp extra virgin olive oil (on top, not to pop)
2 tbsp Date Sugar
Pinch salt (optional)

Instructions
In a microwave-safe bowl with a lid, place 2 tbsp kernels (no oil necessary), cover, and microwave until the popping slows down (3-4 minutes depending on microwave).

Remove from microwave, carefully remove cover, drizzle with olive oil and date sugar alternatively, tossing between to coat well.
