Ingredients
- 1 bell pepper diced
- 1/2 red onion diced
- 3 green onions diced
- 1/2 cup corn
- 1 jalapeno deseeded and diced
- 1/4 cup cilantro roughly chopped
- 1 14 oz can black beans drained and rinsed
- 2-4 cups baby spinach chopped
- 1 zucchini chopped
- 1 large tomato, chopped
Instructions
- Mix bell pepper, red onion, green onion, corn, jalapeno, cucumber, cilantro and black beans in a bowl. Toss well to combine.
- Mix in baby spinach, followed by avocado, diced veggie mix, cucumber, and tomato.
- Serve with Avocado Dressing (below)
Yogurt Avocado Dressing

- 1/2 cup plain Greek yogurt
- 1 medium avocado
- 1/4 cup extra-virgin olive oil
- 2 small limes (juice)
- 1/2 cup chopped cilantro leaves
- 1/2 cup chopped parsley leaves
- 1 clove minced garlic
- 1/4 tsp salt
- 1/4 tsp black pepper
Blend well.
