Chopped Vegetable Salad

Ingredients

  • 1 bell pepper diced
  • 1/2 red onion diced
  • 3 green onions diced
  • 1/2 cup corn
  • 1 jalapeno deseeded and diced
  • 1/4 cup cilantro roughly chopped
  • 1  14 oz can black beans drained and rinsed
  • 2-4 cups baby spinach chopped
  • 1 zucchini chopped
  • 1 large tomato, chopped

Instructions

  • Mix bell pepper, red onion, green onion, corn, jalapeno, cucumber, cilantro and black beans in a bowl. Toss well to combine.
  • Mix in baby spinach, followed by avocado, diced veggie mix, cucumber, and tomato.
  • Serve with Avocado Dressing (below)

Yogurt Avocado Dressing

  • 1/2 cup plain Greek yogurt
  • 1 medium avocado
  • 1/4 cup extra-virgin olive oil
  • 2 small limes (juice)
  • 1/2 cup chopped cilantro leaves
  • 1/2 cup chopped parsley leaves
  • 1 clove minced garlic
  • 1/4 tsp salt
  • 1/4 tsp black pepper

Blend well.
