Zero added sugar in this cake. Most people say “WOW” when they taste it knowing no added sugar. Dates, maple syrup, and raisins sweeten this moist cake good enough for breakfast!

Ingredients
1 cup all-purpose flour
1 cup whole wheat flour
(rolled oats *blenderized)
3 tsp baking powder
2 tsp baking soda
1 tsp salt
2 tsp ground cinnamon
6 whole pitted Medjool dates, (soaked in black coffee or warm water,
then drained and smashed)
1/2 cup maple syrup
1/3 cup melted coconut oil or avocado oil
1 cup light sour cream
4 eggs
2 cups finely grated raw carrots
½ cup crushed pineapple, drained
1/2 cup chopped nuts
3 oz. raisins (Optional)
1 cup unsweetened coconut (Optional)
*blenderized means put in blender until flour-like.
Instructions
- Blend everything together in order, one item at a time. (except icing)
- Spray pan lightly with cooking oil spray. (This keeps parchment paper in place.)
- Place parchment paper in pan.
- Spread 1/2″ batter onto parchment paper in a large flat pan or two.
- Bake at 350o F for 20-25 mins on parchment cookie sheet.
- Let cool completely.
- Spread icing over top completely.
- Cut in half, put second half on top of first.
- Done. Cut and serve.

The Icing on the cake
- 8 oz. Cream Cheese
- 1 tbsp. Maple Syrup
- ¼ cup coconut,
- blenderized to a flour
- 4 oz. Crushed Pineapple, drained
Whip all but pineapple until blended and creamy – do not over mix. Fold in pineapple.

Note: Coconut oil has benefits, such as supporting brain function and gut health due to its medium-chain triglycerides (MCTs), but is also very high in saturated fat, which can raise LDL (“bad”) cholesterol and should be consumed in moderation.
**Studies indicated that consuming approximately 3 to 4 tablespoons of coconut oil per day was linked to an around 10 mg/dL increase in LDL levels.
One piece of 2″x2″x2″ cake contains approximately 0.67 teaspoon of coconut oil.
3 teaspoons are in 1 tablespoon. 9 teaspoons in 3 tablespoons.
Roughly 14 servings per day might be a problem (9.38 tsp).
