Oatmeal Date Bars

Ingredients:

  •  1 cup (2 sticks) butter or coconut oil, softened
  •  1 cup coconut sugar
  •  2 eggs
  •  1 teaspoon vanilla extract
  •  1-1/2 cups all-purpose flour
  •  1 teaspoon baking soda
  •  1/2 teaspoon ground cinnamon
  •  1/2 teaspoon salt
  •  6-10 chopped dates
  •  3 cups quick-cooking or regular rolled oats

Optional: Chopped walnuts or pecans, dried cranberries, raisins, flaxseed.


Directions:

1. Heat oven to 350°F. Lightly grease 13x9x2-inch baking pan. If using a countertop oven/air fryer, use 325°F and a pan that fits.

2. Beat butter and coconut sugar in large bowl until well blended. Add eggs and vanilla; beat well.

3. Stir together flour, baking soda, cinnamon and salt. Gradually add to butter mixture, beating until blended. Stir dates into batter. Spread batter into prepared pan.

4. Bake 25 minutes (15 minutes in countertop oven/air fryer) or until wooden pick inserted in center comes out clean. Cool completely in pan on wire rack. Cut into bars.
