Banana Date Bread

Ingredients
8 oz. (227g) pitted dates
1 cup dark black coffee
1/2 cup plain Greek yogurt
2 cups total (250g) whole wheat/brown rice/coconut flour mix
1 tsp baking powder
1 tsp baking soda
1/2 tsp salt
1 tsp ground cinnamon
1/2 cup softened coconut oil
2 large eggs
3 ripe mashed bananas
1 tsp vanilla extract
1/2 cup chopped walnuts (Optional)

Instructions

  1. Preheat the oven to 325°F (160°C).
  2. Grease and flour a 9×5 inch loaf pan. Set aside.
  3. Soak dates in dark coffee until soft, then drain before using.
  4. Blend the dates and yogurt until pasty and smooth. Set aside.
  5. In a large bowl, mix together the flour, baking powder, baking soda, salt, cinnamon.
  6. In another bowl cream the coconut oil with a hand mixer until light and fluffy. Beat in the eggs. Mix in the date/yogurt mixture, mashed bananas, and vanilla.
  7. Slowly stir in dry ingredients just until mixed-Do not over stir. Fold in the walnuts.
  8. Pour the thick batter into the prepared loaf pan and smooth out the top.

Bake for 60 to 70 minutes, or until a toothpick inserted into the center comes out clean.
Remove from oven and let cool 10-15 minutes on a wire rack before removing from the pan.

Notes
Dairy-free option: You can use almond milk or any other nut or seed milk instead of yogurt.
