
Ingredients
8 oz. (227g) pitted dates
1 cup dark black coffee
1/2 cup plain Greek yogurt
2 cups total (250g) whole wheat/brown rice/coconut flour mix
1 tsp baking powder
1 tsp baking soda
1/2 tsp salt
1 tsp ground cinnamon
1/2 cup softened coconut oil
2 large eggs
3 ripe mashed bananas
1 tsp vanilla extract
1/2 cup chopped walnuts (Optional)
Instructions
- Preheat the oven to 325°F (160°C).
- Grease and flour a 9×5 inch loaf pan. Set aside.
- Soak dates in dark coffee until soft, then drain before using.
- Blend the dates and yogurt until pasty and smooth. Set aside.
- In a large bowl, mix together the flour, baking powder, baking soda, salt, cinnamon.
- In another bowl cream the coconut oil with a hand mixer until light and fluffy. Beat in the eggs. Mix in the date/yogurt mixture, mashed bananas, and vanilla.
- Slowly stir in dry ingredients just until mixed-Do not over stir. Fold in the walnuts.
- Pour the thick batter into the prepared loaf pan and smooth out the top.
Bake for 60 to 70 minutes, or until a toothpick inserted into the center comes out clean.
Remove from oven and let cool 10-15 minutes on a wire rack before removing from the pan.
Notes
Dairy-free option: You can use almond milk or any other nut or seed milk instead of yogurt.
