Ingredients
- 4 cups oats
- 1/2 cup almonds, raw
- 1/2 cup walnuts
- 1/2 cup pumpkin seeds, raw
- 3 tsp cinnamon
- 1/2 cup unsweetened coconut flakes
- 1/3 cup maple syrup
- 1/3 cup coconut oil or avocado oil
After baked and cooled, add:
- 1/2 cup raisins
- 1/2 cup dried cherries, chopped dates, or other dried fruits, unsweetened (optional)
Instructions

- Preheat oven to 350 degrees F.
- Combine oats, almonds, walnuts, pumpkin seeds, coconut flakes, and cinnamon in a large bowl and stir to combine. Set aside.
- In a microwaveable bowl combine coconut oil and maple syrup; microwave on high for 30 seconds or until coconut oil is melted.
- Stir then pour over the top of dry mixture.
- Mix well to coat evenly.
- Spread granola in a 8″x12″ ish pan so granola is a couple inches thick.
- Bake for 25 minutes without stirring (this allows for clusters rather than loose granola).
- Rotate pan, bake another 20 minutes.
- Remove from oven and allow to cool completely. Granola will get crispy up as it cools.
- Mix in dried fruit and raisins after cooled.
- Store in an airtight container.
Hint: Sprinkle granola over yogurt with berries…
